It might seem uncomfortably cannibalistic to stuff a pork chop with bacon, but it sure tastes good.

In fact, when Hubs saw these sitting on the dinner table, he exclaimed: “Just when I thought pork couldn’t get any better…”

And now it seems I’ve overplayed my hand because every pork chop I serve after these will seem tame by comparison.

So make these, enjoy them, but be warned – they will get your tastebuds accustomed to the good life and there’s no going back.

Bacon & Cheese Stuffed Pork Chop (serves 2)

  • 2 pork chops
  • 1/4 cup grated parmesan
  • 1/4 cup grated sharp cheddar
  • 3 slices bacon
  • 2 tsps chopped chives
  1. Fry the bacon in a pan until crispy. Remove from pan (reserving the fat…you need it for the chops) and set aside to cool.
  2. When cool, chop up the bacon into small pieces then mix with the cheese and the chives. Season with black pepper.
  3. Carefully slice horizontally through the thickest part of each chop to create a ‘fold’ in the meat. Cover with clingfilm then use a heavy implement (I went for a rolling pin, it was very satisfying) to beat the meat until it has spread and flattened.
  4. Scoop a tbsp of the cheese mixture along the fold of each chop until it is all used up.
  5. Heat the bacon fat over a high heat then add the chops and sear on each side until brown. Turn the heat down then cook for 3 minutes on each side until done. Serve immediately.

  1. OMG, Cat – so totally F-A-N-T-A-S-T-I-C! My wife, 13yo son and I loved this!! My 10yo daughter shrugged her shoulders – but I’m struggling to cook much of anything she likes at the moment – she has such bland tastes right now, the little so and so. I bought the absolute biggest pork chops I could find, bashed the absolute B-E-E-J-E-E-Z-U-S out of them to make them as round as possible – to fit in more filling 😉 Still couldn’t squeeze in as much filling as I’d like though 😦

    I’m going to play around with some nasty sauce ideas to make this recipe even more insane. Will also experiment with baking in the oven (after the searing) to facilitate cooking in mass for dinner parties, etc.

    OMFG – hope you don’t take offence – these are just sensational. Keep ’em coming, Cat!!!

    • Steffan, I never take offence at cussing over food. In fact, I’ve quite a filthy mouth myself when it comes to a well-cooked pork chop 🙂 – sometimes only the strongest language will do. Glad you liked. Speaking as someone who’s been a picky 10yo girl, I can say with some authority that she’ll come around. The lure of bacon can only be resisted for so long. Have a great weekend!
