Oranges are in season, according to my aunt who knows these things.

She may or may not be a witch, we’ve never quite decided on that one.

If she is, she’s definitely the good kind.

They’re certainly cheap (the oranges, not my aunt) and so it was an easy decision to make these muffins orange muffins.

It’s a flavour sadly overlooked when it comes to baking. Which is a real shame because these buns were great – and might be a good idea for your Easter table if you celebrate that kind of thing.

Spiced Orange Muffins (makes 10-12)

  • 3/4 cup coconut flour
  • 1/2 cup butter, melted
  • 4 large eggs
  • 2 tbsps orange zest
  • 3/4 cup orange juice
  • 2 tbsps full fat, plain yoghurt
  • 1/4 cup maple syrup
  • 2 tsps cinnamon
  • 1/2 tsp cardamon
  • 1/4 tsp nutmeg
  1. Whisk together all ingredients except the coconut flour until well combined.
  2. Sieve the flour into a large mixing bowl then gradually add the wet ingredients (carefully – if you rush it you’ll get a dry, clumpy batter).
  3. Spoon mixture into muffin cases then bake at 400 for 17-20 minutes until firm. Let cook on a wire rack before storing in the fridge and eating within a few days.
