As far as I’m concerned, every Tuesday is Fat Tuesday in our house.
But today is actually Shrove Tuesday/Mardi Gras and that means one thing – pancakes!
And this isn’t just a holiday for the gluten-munching crowd, grain-haters can get in on the act too. I’ve road tested quite a few pancakes recipes over the years (in the name of culinary science, obvs) and am here to tell you that it’s entirely possible to lose the gluten, but keep the taste.
- The photo at the top of this post is my coconut flour pancakes, topped with dark treacle sauce and walnuts. Decadent and awesome.
- If you want something a bit lighter, I’d recommend banana pancakes. Made with only four ingredients, you probably don’t even have to make a special trip to the grocery store.
- And, if savoury is more your deal then try some plantain pancakes. I absolutely promise that you can’t taste the plantain, making them a perfect vehicle for scrambled eggs, bacon, sausages, syrup or basically whatever takes your fancy.
You may as well go a little crazy, it’s Lent tomorrow 🙂
