Some people have a problem with the texture of soaked chia seeds.
I am not one of those people.
Drown them in milk, cocoa powder and maple syrup and I’ll eat any seed on this earth, regardless of the texture.
I’m a bit behind the times with chia. ABC News named it the ‘It’ food of 2013 (there’s a dubious honour if ever I heard one).
That’s fine. I’ve always been a follower of trends rather than a trend-setter. I’m okay with that.
Chocolate Chia Pudding (makes about a cup)
- 2 tbsps chia seeds
- 2 tbsps cocoa powder
- 1/2 cup full fat coconut milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- Whisk all the above together until well-combined.
- Pour into a dish, cover and chill overnight. By morning it will be a gel-like, pudding consistency.
