Ok, so salad dressings aren’t the sexiest recipes around (that particular honour goes mostly to desserts), but they are a very useful and necessary item in a cook’s repetoire.

And a good dressing can transform a plain salad into an awesome salad – kind of like that makeover thing they do to dowdy looking women on daytime chat shows.

Imagine my boring romaine lettuce and shredded veggies salad as the pretty heroine who no-ones realises is stunningly beautiful because she’s wearing dirty clothes and heavy-rimmed glasses.

Now drizzle on some of this dressing.

Immediately the glasses come off, the hair cascades down from its librarian bun, the comfortable clothing miraculously become a slinky dress and she’s a supermodel.

Yeah, it’s kinda like that…but with food.

Zesty Citrus Salad Dressing (makes 1/2 cup)

  • 2 tbsps orange juice
  • 1 tbsp lime juice
  • 2 tbsps lemon juice
  • 1 tbsp grapefruit juice
  • 3 tbsps extra virgin olive oil
  • 1 tsp raw honey
  • 1 tbsp fresh dill, finely chopped
  • a pinch of celery salt
  1. Whisk all the above together.
  2. Chill until needed.
