I had two helpings! Two!

I loathe cucumbers. Seriously, there are not enough words for how disgusting and repellent I find them.

Even the smell makes me gag.

Imagine my surprise then when I found myself munching through two helpings of this salad.

The trick is to lather them in a sweet, spicy, Asian-inspired dressing and therefore dampen the cucumber’s horrible, watery taste.

If you’ve any other ideas for helping me get through the mound of cucumbers I got from my veggie box last week, please let me know in the comments.

Asian Cucumber & Carrot Salad (makes around 3 cups)

  • 1 large carrot, peeled and grated
  • 1 cucumber
  • 1 green onion, finely sliced
  • juice of half a lime (about 3 tsps)
  • 2 tsps naam pla/fish sauce
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tsp honey
  1. Whisk together the honey, fish sauce, lime juice, ginger and garlic.
  2. Peel the cucumber, slice it horizontally and scoop out the seeds. Dice the remaining flesh.
  3. Toss the cucumber, onion and carrot with the dressing until well coated. Serve immediately.

  1. I’ll begin by confessing…I adore cucumbers!! Is’t it interesting how one person loves them and one hates them? We cancel each other out?? My MiL was famous for her “Creamed Cucumbers” that we served in huge bowls for our silage cutting crews not so very long ago. Peel, slice and soak abt 4-6 cups cucumbers in salted water, about 1Tblspn. in 8 cups water. Refrigerate overnight.
    Drain the next morning. In separate bowl, whisk together 2 cups cream, 2 Tblspns vinegar, 1 cup Miracle Whip (or mayo), 3-5 Tblspns sugar. Pour over drained cukes and prepare to be amazed. NOT low cal. At all. Mind you, we did this by just tossing the ingredients in w/no measuring. ALL ingredients are adjustable, so experiment!! You can go half cream half milk also.

    Can’t wait to try your recipe! Cukes scream SUMMER and we need a bit of that right now…just go 3 more inches of the white stuff overnight. Thanks!
