We’ve only been seeing each other for a few months but I like to think my acupuncturist and I have become friends (which is no mean feat considering she sticks needles in my soft fleshy parts twice a week).
As I was lying there yesterday doing my best porcupine impression, she said she’d invented The Best Salad Dressing Ever.
I confess I made a “srsly?” face when she was describing it to me but, by the end of our session, she won me over. Either that or I was high on acupuncture-induced endorphins.
I whisked it together that very night and both hubs and I were impressed. Girl knows her salad dressings.
It’s tangy, sweet and just the right amount of sour. She recommends drizzling it over kale but I stuck with butter lettuce leaves and threw in some avocado for good measure.
It is surely proof that she and I are destined to be BFFs forever. Me, her and her needles are going to be very happy together.
Dr A’s Maple, Lime & Dill Salad Dressing (makes about 1/4 cup)
- 2 tsps maple syrup
- 2 tbsps extra virgin olive oil
- 4 tsps fresh lime juice
- 1 tsp dill weed
- a generous pinch of cayenne pepper
- Whisk all the above together. Serve over your favourite greens.
